January is the time when people resolve to make changes for the better. I don’t really adhere to making a list of “New Years Resolutions” but I like the idea of looking forward with a bright and shiny attitude. I find myself thinking about cooking (obviously) and desiring to incorporate wholesome and healthy ingredients to liven things up in the kitchen. My favorite yummy fresh ingredient is….AVOCADO (surprising no one)!
Inspired by this video from Refinery29 + Chef Roble, I made my own tweaked version of his avocado dressing. Flavorful and robust yet light and good for you; it pairs perfectly with salads, salmon, eggs…you name it. I could eat it by the spoon. “Get in ma belly!” (10 points to whomever gets that quote) I had some fun with still life photography so be prepared for the most dramatic ingredients you’ve ever seen (dun dun duuunnn!)
1/2 lemon (juice and zest)
1/4 cup of ricotta cheese
1/4 tsp salt
1/2 tsp chili flakes
1/4 tsp fresh cracked black pepper
1/4 cup of water (use sparingly)
Cut avocado in half and remove the seed. Scoop out the good stuff and place in a blender. Add the rest of the ingredients, reserving the water to add in a little at a time until desired texture is reached.
That’s it! It’s really simple and you can adjust the spices to taste. I paired mine with salmon and quinoa for a healthy and delicious dinner.
